Italian Style Meatloaf Pepper Rings. It seemed like a perfect meal to make on one of my fall flex days. Fill each pepper ring with meat loaf mixture. In a small bowl, whisk together ketchup and brown sugar and brush on tops of meat loaves.

Ingredients of Italian Style Meatloaf Pepper Rings

  1. Prepare 2 of red bell peppers.
  2. Prepare 2 of green bell peppers.
  3. You need 1 of small onion, chopped.
  4. Prepare 1 lb. of ground beef.
  5. You need 1 of egg.
  6. You need 1/2 cup of Italian style bread crumbs.
  7. It's 1 Tbsp. of dried parsley.
  8. It's 1 tsp. of garlic powder.
  9. You need 2 tsp. of Italian seasoning.
  10. It's 1/2 tsp of pepper.
  11. Prepare 1/4 tsp of salt.
  12. You need 2 Tbsp. of Grated parmesan cheese.
  13. It's 1 jar of your favorite spaghetti sauce (I used Prego - Three Cheese).
  14. Prepare 1-1 1/2 cups of shredded mozzarella cheese.

Pour remaining pasta sauce over meatloaf. Press the meatloaf mixture evenly into the pepper rings. To a large bowl add ground beef, Italian sausage, bread, egg, shallot or onion, garlic, Italian seasoning, salt, pepper, and red pepper flakes if using. I use pepper rings instead of the usual whole peppers; since it takes less time to bake, there is more meat taste instead of mostly peppers, and they look so pretty on the plate, in my opinion.

Italian Style Meatloaf Pepper Rings instructions

  1. Slice the tops and bottoms of the peppers off and set aside. Cut the remaining section of pepper into two rings. You will have 8 total rings. Place on a greased baking sheet. (I accidentally cut through the side of one, if this happens, just toothpick it secure)..
  2. Mix ground beef, bread crumbs, egg, seasonings, parmesan cheese, onion and 2 Tbsp. of the spaghetti sauce. Dice the tops and bottoms of peppers you had set aside and add to the mix..
  3. Spoon the meat mixture into the pepper rings. Place in preheated 375 degree oven and bake for 40 minutes..
  4. Remove from oven and top each pepper ring with about 2 Tbsp each spaghetti sauce. (You will have some left over, save for another use). Top with mozzarella cheese to preference. We really like cheese :).
  5. Place back in oven and cook an additional 15 minutes or until cheese is melted and bubbly. Enjoy!!.

I love using colored peppers for a fun visual effect! Serve with sour cream, Greek-style sour cream, or nonfat yogurt. My hubby is a fan of hot pepper, that is why we have a whole section of the garden dedicated to his hot pepper addiction. If I remember correctly so far he has been growing jalapenos and growing ghost peppers in his area. After he has made his homemade hot sauce, I take some of them and use them for canning italian hot pepper rings.
